Mango-Curry Chicken/BBQ Pork Tenderloin Skewers

FINALLY!!!…summer is right around the corner!!!
The weather gods must have heard my desperate prayers and finally decided to send a little bit of sun my way…
Today is a bank holiday in Sweden, so I got to spend this warm, sunny, clear-blue-skied, wonderful day at home with my as wonderful family. We mostly spent the day preparing the garden for the summer season (mowing the lawn for the first time this year, prepared an area where we plan to grow some vegetables, herbs and other green goodies, oiling the sun deck and so on…), and just walking around barefoot, producing vitamin D and feeling Paleo as f@#k! Hahaha! :)
We then finished the day off with firing up the grill, which leads me from the jibberish above (which I understand is of no real interest to anyone but myself…but I just feel too damn good all the way into the very core of my soul today to not shout it out ;)), and on to the real topic: “Today’s Dinner”.

(However, I’m afraid I might disappoint you again as it’s so simple it’s more of an inspirational post than a real recipe… (apologies if you feel I waste your time here ;)).)

Mango-Curry Chicken/BBQ Pork Tenderloin Skewers

Ingredients:
• 1 Pork Tenderloin.
• 2 Chicken Breasts.
• 1 Onion.
• Some Cherry Tomatoes.
BBQ Rub. (Source: The Domestic Man)
• Mango-Curry Spice. (Don’t know how common this is, haven’t seen it anywhere else but from this particular brand (“Santa Maria”). It’s a bought spice mix that includes curry and mango powder, but no sugar and not too much other shady stuff. …except for maybe the “mango powder” then, haha. Haven’t seen that anywhere by it self…hmmm, let’s hope it’s just ground, dried mango…
Edit: Found some info on Mango powder, seems legit and is available from multiple online spice shops, so if you don’t find a Mango-Curry mix you should be able to make your own: “Mango powder is made from raw green mangoes that are cut, sun-dried, and pounded into powder.”)

Just cut chicken, pork and onion in bite size pieces. Toss the chicken in the mango-curry, and the pork in the BBQ rub. Put all ingredients on skewers and grill until done.

I served this with a Strawberry Salad and a little bit of Béarnaise Sauce.

…and then I had a square of 70% mint-chocolate and an espresso for dessert.
Life is good today.
