Healthy (4th of July) Waffle Breakfast

This recipe is something my girlfriend often makes for breakfast…either as pancakes or waffles.
She claims it’s the one thing that made her being able to stick to the LCHF diet when she first started (finding a good replacement for the breakfasts you’re used to eat seems to be the hardest part for many when switching to a Paleo/LCHF type of diet), so once she found these they were quite frequently served in our home for a while. :)
I think they’re delicious, and a great way to start the day!
(Originally I think the recipe comes from some Swedish LCHF cookbook…)

An awesome coconut waffle breakfast, and as it’s the 4th of July today I pimped ’em up in red, white and blue for the American readers ;)

Ingredients (per person):
• 2 (to 3) Eggs.
• 2/5 cup (about 7 tbsp) cream.
• 1 1/2 tbsp coconut flour.
• 1/4 tsp vanilla powder (ie. 100% ground vanilla beans, no additives).
• (A bit of butter or coconut oil for frying.)

How to:
Heat up a waffle iron (or small frying pan if making pancakes).
Whip all the ingredients together to a smooth, lump free, batter (I suggest using a hand mixer).
Grease the hot waffle iron/frying pan with butter or coconut oil, add a bit of batter and fry until done…repeat until you’re out of batter.
Serve with fresh berries.

LCHF?: Absolutely!
Paleo?: …Depends on how dairy tolerant you are, but definitely not strict Paleo.

    • Hi there!

      I’m sure you could, but probably not in a 1:1 ratio, as I find the liquid extracts being much more concentrated in flavor.
      I know some recipes substitute vanilla powder with liquid vanilla extract at a ratio of 4:1 (meaning 1 tsp powder is replaced by 1/4 tsp liquid extract), so I would recommend start testing somewhere in that range.
      (Also make sure the liquid extracts does not include any wired additives…)
