Almond Milk

Almond milk is nothing that is commonly available in Swedish stores, therefor I was really excited reading a producer of soy and rice milk was adding almond milk to their line of products…
…and equally disappointed when I eventually found it in a store and read the ingredient listing..they had thrown a boat load of sugar in it! ;(
Well, I had already set my mind on almond milk so I just picked up some organic almonds instead and went home and made my own…

(Don’t know why I didn’t do that in the first place…it’s dead simple and hey, isn’t it mandatory for every paleo oriented blog to have an almond milk recipe post??) ;)
Ok now…enough about that, here’s how you make your own:

• Water, the same volume as the amount of almond milk you want to make.
• Almonds, half the volume of the water.
• Vanilla Powder, ie ground vanilla pods. (Optional)
(Extra water for soaking the almonds.)

How To:
Put the almonds in a bowl and cover with water, let soak at least over night.

Drain the almonds and put them in a blender, add twice the amount of water and a bit of powdered vanilla, then blend for a couple of minutes (might wanna let the blender rest a while after each minute to avoid over heating…).

Strain the mixture (preferably through a bag shaped piece of cloth) into a bowl and gently squeeze out all the almond milk.

Pour over into a bottle and enjoy your home made almond milk.

(The almond milk can be stored in the fridge for a few days, and might need a little shake before consumption…)

PS. Everyday Paleo had a great suggestion on what to do with the left over almond pulp…dry it in the oven and you’ve turned the waste into useful almond meal! DS.
