Pink Applesauce With Ginger

Today’s recipe is a super easy, quick, delicious, two-ingredient pink applesauce!

Applesauce goes great with just about any pork dish (according to me), and being Paleo friendly this one only brings natural flavors and sweetness, just as it should be!

Pink?!…you might think (as the one pictured above obviously has a more orange tone to it). Well…that’s because I “stole” the recipe, name and everything, and mine simply didn’t turn out as nicely pink as the original.
(Plus…”orange applesauce” would just be too confusing…)
It’s “stolen” straight from my favorite Swedish Paleo recipe blog “Under Vårt Tak” (with their blessing of course), and all credits goes to them.

Magnus and Jenny of “Under Vårt Tak” publish comforting, Paleo friendly recipes…and to me their signature is to not make things more difficult, complicated or fancier than it needs to be.
I don’t know if it’s their intention but, I also find the name of their blog quite genius. “Under vårt tak” means “under our roof”, and it’s kind of self-explanatory that what they publish is also what is being served in their house.
However, as the special characters of the Swedish alphabet is not used in URL’s, their address becomes “under vart tak”….which then means “under every roof”.
…without a doubt, if Magnus’ and Jenny’s food was served under every roof, this world would be a much healthier place!

(Makes about 2 cups (5dl) applesauce.)

• 2-2.5lb (1kg) red Apples.
• 1 tbsp minced Ginger.

How To:
Bring a large pot of water to a boil.

Meanwhile…wash, de-core and dice the apples.
(Don’t peel them, the peel is what give this applesauce it’s color..)

Add the diced apples and minced ginger to the boiling water, and boil for 1-2 minutes.

Strain and mix smooth with a hand mixer or a food processor.

Pour the applesauce into airtight containers and store in the freezer.
(Leave a little bit of air between the sauce and lid to allow the sauce to expand while freezing.)

Enjoy with e.g. pork chops.
